After indulgent eating and drinking during the festive period our New Year Relish is packed with all the vegetables we need to get back on track. With a base of tomato, add in courgette and aubergine to create a texture similar to that of a salsa.

This relish makes an ideal pizza topping, pasta sauce or stirred into bolognaise for a greater depth of flavour.
