RICH SCONE MIX RECIPE
Scone Mix - 1kg, Water - 445ml, Fruit - 140g
- Weigh dry mix into machine bowl fitted with a beater
- Add water over half a minute on slow speed, scrape down bowl
- Add fruit, mix on slow speed to clear dough
- Allow dough to rest for 5 minutes
- Pin out dough to approximately 5/8 inch thickness
- Cut out to required size, place on baking sheet and egg wash
- Allow to rest for 15-20 minutes
- Apply a further egg wash
- Bake at 220 °C - 225 °C
