RICH SCONE MIX RECIPE
Scone Mix - 1kg,     Water - 445ml,     Fruit - 140g

1. Weigh dry mix into machine bowl fitted with a beater
2. Add water over half a minute on slow speed, scrape down bowl
3. Add fruit, mix on slow speed to clear dough
4. Allow dough to rest for 5 minutes
5. Pin out dough to approximately 5/8 inch thickness
6. Cut out to required size, place on baking sheet and egg wash
7. Allow to rest for 15-20 minutes
8. Apply a further egg wash
9. Bake at 220 °C - 225 °C
